Winter Comfort: Robust Leek and Potato Soup

      For me, as soon as the temperatures drop, nothing brings the feeling of warmth and comfort like a bowl of hearty soup. One of my favorite soups for winter is leek and potato. It’s rich and creamy, providing just the right satisfaction on a chilly winter day.

      Ingredients

      - 50g butter

      - ½ white onion, diced

      - 4 leeks, sliced

      - 2 medium potatoes, peeled and cubed

      - 2 tsp Dijon mustard (optional)

      - ½ tsp salt

      - 1 tsp freshly ground black pepper

      - 750ml vegetable or chicken stock

      - 250ml milk

      Method

      In a large saucepan, melt the butter and add the onion and leeks. Cook for about five minutes until they soften.

      Add the potatoes, Dijon mustard (if using), along with the salt and pepper, and stir to ensure everything is well coated. Cover and allow the vegetables to sweat on low heat for approximately 10 minutes.

      Remove the cover, add the vegetable or chicken stock, bring it to a simmer, cover again, and cook on low heat for an additional 15-20 minutes until the vegetables become tender.

      Once done, stir in the milk, bring it back to a simmer, and then take it off the heat.

      Transfer the soup contents to a blender or use a hand blender to puree until smooth.

      Return the blended soup to the saucepan, heat it gently, and if the soup is thicker than you prefer, feel free to add more stock or milk. Taste and adjust the seasoning with additional salt or pepper if necessary.

      Serve hot.
